We’re stuck in the middle of a slippery, icy snowstorm today…and I wanted to make a dessert to share with our good friends tonight. That means NO trip to the grocery store and it’s another “use what you’ve got on hand” moment in my kitchen. Thank God my Mom taught me how to be resourceful in these situations!
While rummaging around in the pantry I found a can of pineapple. And I found part of a jar of Maraschino cherries in the refrigerator. I saw a cake mix in the cupboard…so what to make? A Pineapple Upside Down Cake…of course!
I have a can of whipped cream left over from Thanksgiving, so I’ll top each serving of cake with a big dollop of whipped cream…and our friends will never suspect they are doing me a favor by cleaning out my pantry at THEIR expense. (They won’t know until I TELL them, that is…) Our good friends always put up with my crazy cooking adventures, and they even eat the evidence. Now those are real, true friends!
