Our friend Joy…a waitress at The Egg & You Diner in Fort Lauderdale shared her recipe with me…and of course I added my own twist to it. Hope you like it!
CAESAR SALAD DRESSING
Mix in blender or food processor:
1 can (2oz.) anchovies
5 T. lemon juice
2 T. Worcestershire sauce
2 Large T. minced garlic
1 oz. dry bleu cheese
a little salt
fresh black pepper
2 T. mayonnaise
1/2 C. grated parmesan cheese
Then stream in slowly:
1 Cup Extra Virgin Olive Oil
Blend and store in the refrigerator to marry flavors.
SALAD PREP
Fill salad bowl with romaine lettuce. Add 1 can black olives. Toss in scant amount of dressing. Add 1 pkg croutons and 1/2 C. shredded asiago cheese. Toss all together. Add fresh ground black pepper. Serve immediately.
