Football Saturdays are a big deal in Iowa City…and Nachos are an easy and delicious dish to serve to a Hawkeye crowd.
Simply line a cookie sheet with tin foil (easy cleanup) and spray the foil with cooking spray. Add a layer of nacho chips, then layer on whatever ingredients your crowd likes.
I layer cooked sausage or ground beef, black beans, onions, peppers, fresh cilantro, shredded cheese, nacho cheese sauce, and diced tomatoes. Repeat layers to make a heaping platter.
Place on the grill and close the lid until the cheese melts and all the ingredients are heated through.
Remove from the grill and top with dollops of sour cream and guacamole if you wish…or let your guests add their own toppings. Sprinkle with fresh cilantro and parsley if desired.
No matter who many pans of Nachos I make…we never have leftovers since our tailgating neighbors are always quick to clean up any extras!
