I couldn’t find a recipe that used the ingredients I had on hand…so I combined several ideas and made up my own…
PREHEAT OVEN TO 350 DEGREES…
In a saucepan combine
2 cups pitted tart cherries with the juice
2 T. corn starch
a pinch of salt
Heaping 1/4 C. sugar
Heaping 1/4 C. brown sugar
1/2 tsp almond extract
Cook over med/high heat until bubbly
Then add 1T. orange juice and stir well and pour into an ovenproof dish that has been sprayed with cooking spray.
For Topping:
Combine
1/3 C. melted butter
1 C. oatmeal (uncooked of course)
1/2 C. brown sugar-packed
1 tsp. cinnamon
1 pinch of salt
Mix topping ingredients well until mixture is crumbly
(Be sure to place a cookie sheet under the dish in case the dessert bubbles over…and it may!)
And the finished product??
Bring on the Ice Cream!
