First of all…who doesn’t love PIE. And our grandkids know their way around the kitchen…especially if dessert is the result!
When 5 year old Claire came home from preschool, she whipped up a key lime pie…almost by herself. (I separated the eggs and put the pie in and out of the oven…but she did all the rest!)
This “Renaissance Girl” is amazing. After running around the neighbor’s yard until her cheeks were as red as apples (and while wearing her swimsuit and goggles before leaving for swim practice) she took time to sprinkle on the lime zest to decorate her dessert.
What a CHEF! (And what a delicious dessert!)
KEY LIME PIE
In a blender, combine
3 egg yolks
1 8 oz pkg cream cheese, softened and cut into cubes
1 can sweetened condensed milk
1/2 cup key lime juice (We use Nellie & Joe’s Key Lime Juice)
Blend until WELL BLENDED.
Pour into a graham cracker crust and bake at 350 degrees in a preheated oven for fifteen minutes. Cool and then chill in the refrigerator for several hours. Top with fresh lime zest and whipped cream before serving if desired.
