It’s not very often that you buy one spice and get a second one for free…but that’s exactly what you get when you buy fresh, unshelled nutmeg.
The outer shell is covered with lace-like yellow “threads”. That is actually mace. You can peel that part off and use it in baking. You then crack the “nut” open to reveal the actual nutmeg seed inside.
If you have never baked with fresh-grated nutmeg you are in for a treat. The smell is amazing! And these nutmeg nuts last for years! (In fact, I brought these home from the Caribbean when I used to travel there often when I owned a cruise travel agency.) You only grate what you need for your recipe and save the rest for future baking.
