Are you sorry Thanksgiving dinner only comes once a year? I am. But our local Fareway grocery store offers a delicious (and quick) option for a “turkey fix” ANY time of year. Bacon Wrapped Turkey Tenders.
Here is how I prepare them…
Dust the tenders with salt and pepper, and a sprinkle of my Dry Rub (Recipe under Condiments on my blog) and let them come to room temperature for about 15-20 minutes. Drizzle several tablespoons of Extra Virgin Olive Oil (a.k.a. EVOO) in a skillet and sear the tenders on ALL sides. That includes standing them on edge to crisp and brown the bacon wrap that holds them together. COOKING TIP: I do NOT use a nonstick skillet for this dish, since I want all the good “brown bits” from the seared turkey to end up in the sauce. Those brown bits can take a dish from so-so to SO GOOD. Trust me.
When all sides are browned, lower the heat to LOW and pour in several cups of chicken broth. Scrape up all those good browned bits and stir them into the sauce. Then cover the skillet with a lid. Let them steam for a few minutes. DO NOT overcook. When cooked through, remove turkey from the skillet and let them rest for at least five minutes before serving. During that time, add a “slurry” of flour and water (about 1 T. flour in 1/2 c. water) to the chicken broth and pan drippings to slightly thicken the sauce. And throw in some chopped parsley for color. You’re DONE!
I served mine with homemade garlic mashed potatoes and fresh cooked green beans…
A quick turkey dinner…and it’s not even November! (But I’m ALWAYS thankful, no matter what day it is!)
