I guess I’m on a Mexican food binge…even for breakfast! (I’ll admit, I’ve been known to head to the drive through for a Breakfast Burrito…at McDonalds!)
So one morning, I decided to make one at home…and it was a cinch! Here’s how I did it.
Heat tortilla shell on indoor grill |
Heat ham and diced onion in skillet |
Beat 1 egg and 1 T. salsa in bowl |
Pour into the ham and onion mixture in skillet |
Place slice of cheese on hot tortilla and top with cooked egg mixture |
Roll up… |
Cut in half…and ENJOY! |
