Patricia was looking for a way to use up some odds and ends in her refrigerator and freezer, and I LOVE to play that game! She pulled a package of miniature frozen puff pastries out of the freezer, and I began to think about what to fill them with to eat as appetizers before we dug into our home made veggie beef soup for dinner.
After rummaging through the refrigerator I pulled out cream cheese, orange marmalade and walnuts. I also found some portabello mushrooms, feta cheese crumbles and fresh basil. And here are the results…Both a SWEET and a SAVORY version…
For the SWEET version, I stirred together some softened cream cheese and a big dollop of orange marmalade. I filled the shells with the mixture and then topped each one with some toasted walnuts.
For the SAVORY version, I filled some shells with feta cheese crumbles. I topped them with minced mushrooms and shredded fresh basil. I baked ALL the shells in a 350 degree oven for about 5 minutes.
Not a bad way to start our meal, and we all agreed both versions would be good enough to serve at a party.
