OK…so today I made my usual stop at US Foods Outlet Store…and this is what I found in the Fresh Produce case…
HUGE restaurant-ready bags of beautiful, fresh parsley…for TWENTY-FIVE CENTS!
So…Like the TV show says…What would YOU do??
I made PESTO!
PARSLEY PESTO Recipe…(Sort Of)
Pack the bowl of your food processor with fresh parsley.
Then throw in 5-6 garlic cloves, peeled
Add a handful of Fresh Parmesan Cheese
Salt and Pepper
A handful of walnuts (You can omit…or substitute pine nuts)
“Whir” these items together until finely chopped, then stream in
Extra Virgin Olive Oil while processor is running.
When the mixture is the right consistency, spoon into old ice cube trays (if you have some lying around) or spoon into muffin cups…Then freeze until firm and place individual “cakes” in plastic freezer bags until you need them. BE SURE TO LABEL BAGS TO SAY “PARSLEY PESTO-CONTAINS WALNUTS” to prevent allergic reaction by someone.
I’ll thaw and use this pesto this summer in homemade salad dressings, pasta, sandwich spreads, etc., etc., etc. I think I’ll add some to burgers or fish on the grill, too. My imagination is running wild, as usual.
Like I’ve said before…I never know what food treasure awaits me at The Outlet…but I’m always ready to add those “finds” to our menu. Parsley Pesto? It’s another way to Eat A Rainbow…Every Day!
