OK guys…you know I am trying to use up everything in my Iowa house before we turn it over to our friend for the winter.
I opened the refrigerator and decided it was time to use up half a jar of unsweetened applesauce. I looked for a recipe that used lots of what I still have on hand…but nothing seemed quite right. So here is the cake recipe I invented on this cold and snowy afternoon. (I think I was more excited about the smell of the cake baking than actually eating it…I LOVE the smells of Christmas spices!)
APPLESAUCE RAISIN CAKE
Mix these ingredients well:
1 stick softened butter
1 cup sugar
2 T. Molasses
2 eggs
Mix these ingredients together in separate bowl:
2 C. flour
1 tsp. Baking Soda
1 tsp. Cinnamon
1/2 tsp. Salt
1/2 tsp Allspice
1/4 tsp. Ginger
Combine BOTH bowls into one and mix well. Then add 1 1/2 cups applesauce and mix. Then stir in (by hand) 1 C. raisins.
Spray Bundt pan with cooking spray and pour batter into pan. Bake at 350 degrees for approx. 45 minutes or until wooden toothpick inserted in center comes out clean. Remove from oven and cool 10 minutes. Pull cake from sides of pan. Flip cake onto serving plate. Sprinkle with a mixture of cinnamon and sugar. (Not bad for a “made-up” recipe…)
AFTER DINNER UPDATE…
FYI…This “made-up” recipe may become one of my favorite desserts! I served the cake with a big dollop of vanilla ice cream…and it really was moist and full of spice flavors of the season.
I may need to ditch some other standard dessert recipes and embrace my REBEL-SIDE more often! (I can see Fred’s eyes beginning to roll…)
