We celebrated the first of TWO Fathers Day dinners last night, and we pulled out ALL the stops!
Nick thawed out some JUMBO raw shrimp, and he bought some steaks. And I made a potato gratin to go with the surf and turf. I found a huge bag of asparagus in the veggie drawer of Nick’s refrigerator…so I decided to try something different…
I sprinkled salt and pepper on the asparagus, then I wrapped four or five stalks of asparagus with a strip of thick sliced bacon and placed them on a baking sheet.
I threw the tray into a hot (425 degree) oven for about 15-20 minutes. I flipped the bundles several times to brown the bacon on all sides.
And the finished product?
DELICIOUS!
