Banana Nut Bread is a great breakfast treat…any day of the year.
The other day we took a short road trip to visit a dear friend here in the Heartland, and I wanted to take her a gift from my kitchen. I remembered I had some overripe bananas in my freezer, so I knew just what to whip up for her.
Whenever I have overripe bananas I simply throw them into a zip lock bag and pitch them into my freezer. I don’t peel them. I just toss them in a bag and freeze them. When you pull them out of the deep freeze the peeling will be black and the flesh of the fruit will be very soft and juicy. That’s perfectly fine! Just peel and dump into your mixing bowl and start baking!
Of course, if anyone has nut allergies, simply omit the walnuts from the recipe.
The results? Here you go!
So do not throw those overripe bananas away! You’re about 35 minutes away from loaves of bread that are good enough to give as gifts!
