Sometimes the best recipes are found in the strangest places, like this one for Blueberry Lemon Walnut Bread I found on the back of a bag of Southern Grove Walnuts from our local Aldi grocery store.
Wowza…and YUM!
The other day I was thinking about baking something without having to make a trip to the store for more ingredients, and this recipe sounded like a winner. And trust me, it is!
Our dear friends from Oregon were flying down to see us, and I was looking for foods I could prepare ahead of time so I would be out of the kitchen while they were here, and I thought this bread would be a delicious, no fuss breakfast treat.

As I began to prepare this lemony loaf I realized this would be a perfect time to share several baking tips I’ve learned.
Thanks to TV cook Nancy Fuller for THIS gem. Use a serrated knife to chop nuts! Those slippery little devils will stay on your cutting board instead of flying all over your kitchen! (Thanks Gigi!!! I had never heard of this trick until you shared it on your TV show Farmhouse Rules.) The only serrated knife I have in my small snowbird kitchen is my bread knife, but it worked like a charm!
Sixty years ago my mom taught me to toss nuts and fruit in a bit of flour before stirring into any type of batter. It keeps everything suspended and from sinking to the bottom. (Try it…it really works!)
So the next time you’re looking for a delicious bread you can serve ANY time of the day…Give this one a try.
I’m certainly glad I read the back of that Southern Grove Walnut package, because this bread is definitely a keeper in MY kitchen. (And it got a huge “thumbs-up” from our Oregon friends too.)
Blueberry Lemon Walnut Bread
This sweet yet tangy bread is PERFECT...whether served for breakfast or as a dinner dessert!
Ingredients
- 1 Cup Walnuts (I used Southern Grove brand from Aldi)
- 2 Cups Flour
- 2 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1/4 tsp. Salt
- 1 Cup Sugar
- 2 Tblsp. Lemon Zest
- 3/4 Cup Buttermilk
- 1 tsp. Vanilla Extract
- 2 Tblsp. Melted Unsalted Butter
- 2 Tblsp. Canola Oil
- 2 Eggs
- 1 Cup Blueberries
- 3 Tblsp. Powdered Sugar For the GLAZE
- 2 Tblsp. Lemon Juice For the GLAZE
Instructions

1. Preheat oven to 350 Degrees. 2. Spread a single layer of walnuts onto a baking sheet and toast walnuts in the preheated oven for 8-10 minutes. (WATCH CAREFULLY BECAUSE THEY CAN QUICKLY BURN!) Remove from the oven and let cool 3. Using a whisk, mix flour baking powder, baking soda and salt in a mixing bowl. 4. in a separate bowl mix together sugar. lemon zest, buttermilk, eggs, vanilla, melted butter and oil. 5. Pour liquid ingredients into a pit created in the bowl of dry ingredients and lightly combine. (Take care not to overmix.) Dust blueberries and chopped walnuts with flour and then fold them into the batter. 6. Grease and flour an 8" x 4" loaf pan. Spread mixture into the pan. 7. Bake for 55 to 60 minutes or until toothpick inserted in the center comes out clean. When finished baking, allow to cool for about 20 minutes before removing from the pan. 8. GLAZE: mix the powdered sugar and lemon juice and stir well. 9. Brush or drizzle onto loaf while it's still warm. 10. Wait for compliments to roll in! š
