A short list of common ingredients can make all the difference in whether or not to tackle a recipe. And these simple cookie bars couldn’t be easier. Just check out the four simple ingredients you may already have in your pantry and refrigerator.
If you’re a regular reader of my blog you know about the dereco that devastated our area in August. So I decided to do what little I could to help our nearby neighbors in Cedar Rapids. You can read about both of our “caravans of love” right HERE and HERE.
When I learned that the folks were requesting baked goods…well…that was music to MY ears! Finally I found something I could do to help, and still stay safe at home.
I began to search the web for something easy I could make in a hurry. And somewhere online I found this recipe…or something close to it. I wish I could remember so I could give credit. But these days I seem to be suffering from “Covid Brain” and some days I can barely remember what day it is. So for all the similar online recipes I say “Thank You” for giving me the idea to create these bars.
Here goes!
First, grab a stick of butter (that’s 1/2 cup) and throw it in the microwave to melt.
Next, dump the dry cake mix into a bowl and add the melted butter.
Add the two beaten eggs and mix all together. (The batter will be very thick!)
Stir in the bag of chocolate chips. I like the milk chocolate ones but semi sweet work fine too. You could also add some vanilla at this time. And chopped nuts or mini marshmallows would be yummy ingredients fo add too. But since I was making these to give a way I did NOT want to add any type of nuts in case of allergies!
Time to spray a 9 x 13 inch baking pan with cooking spray.
And pour the mixture into the pan.
The easiest way to spread out the thick dough is with a rubber spatula.
I baked the bars at 350 degrees just until lightly golden brown. I think it took about 18-20 minutes or maybe a few minutes longer. Do NOT overbake or the bars will be crumbly and dry.
Since I baked these to hand out to hungry folks I wrapped each bar individually for sanitary reasons. I also included a note to put on the serving table so folks knew the bars were nut free.
I think I made five batches that day…and it felt great to DO something to help!

Cake Mix Chocolate Chip Bars
Ingredients
- 1 Dry Cake Mix (Approx. 15.25 oz.) Any Flavor (White, Yellow, Chocolate)
- 1/2 Cup Melted Butter (1 stick)
- 2 Beaten Eggs
- 1 Bag Chocolate Chips (Approx. 12 oz.)
Instructions

Preheat oven to 350 Degrees.

Spray 9 x 12 baking pan with cooking spray and set aside.

Pour dry cake mix into mixing bowl.

Add melted butter.

Add two beaten eggs.

Mix those ingredients well.

Fold in chocolate chips.

Pour into prepared baking pan and spread out with a rubber spatula.

Bake at 350 degrees for 18-25 minutes until light golden brown. (Don't overbake.)
