Chocolate pudding and grandkids go hand in hand. And I love to look back on my blog posts from years gone by…especially to see how much all seven of our grandchildren have grown. That’s when I realize how much time I have spent in the kitchen with our wonderful grandkids!
I started writing my blog so I could leave my recipes and family stories for all of our grandchildren long after I’m gone. But at the time I didn’t realize what a long running snapshot of our growing and changing family these posts would be. When I see how these Indy girls have grown over the past five years it’s amazing and heartwarming…especially since I know they have grown to love cooking just like their old Meemaw! So check out this blast from the past…and make this chocolate pudding with some kids YOU love. They’ll be happy to eat it, and you’ll be happy for the hugs they give you in return!
While we spent some time with our Indiana grand kids (way back in 2012) I decided to treat them to some homemade chocolate pudding since all the ingredients we needed were already in their cupboard. These girls were more than happy to help me make it…and EAT it!
- 1/2 cup white sugar
- 2 1/2 to 3 tablespoons unsweetened cocoa powder (I like less)
- 1/4 cup cornstarch
- 1/8 teaspoon salt
- 2 3/4 cups milk (Whole milk works best…but any kind will work ok, except skim)
- 2 tablespoons butter
- 1 teaspoon vanilla extract
Directions
- In a heavy bottomed saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. Bring to a boil, and cook, stirring constantly, until mixture thickens enough to coat the back of a metal spoon. (It has to come to a full boil for a few seconds to cook out the cornstarch taste.) Remove from heat, and stir in butter and vanilla. Let cool briefly, and serve warm, or chill in refrigerator until serving. (I cover the top of the pudding with Saran Wrap to keep it from forming a “skin”.)

I used to make boxed cooked pudding all the time but this sounds better.
