Ideas for my blog posts sometimes come to me in crazy ways…like today. This coconut tree next door was my inspiration. (Yup…a coconut tree!)
This was a gorgeous morning here in the Sunshine State, and I walked out on our deck to sip my coffee and to soak up some rays as I thought about the day ahead. And that ‘s when I noticed how many coconuts were hanging on the tree next door.
I began to ponder the fact that I haven’t made any recipes that include coconut for quite some time, and I remembered I had bought a bag the last time I went to the store. So the seed was planted in my brain. What could I make?
And then it hit me like a ton of bricks….or in my case like a bunch of bananas!
I suddenly remembered I had just picked up some bananas in my kitchen that needed to be used. And just how did I know they were almost over the hill? Well…when I picked them up in the fruit bowl the peelings all began to fall off. (Now THAT is a RIPE banana!)
Want proof? Here they are. And you know me…waste not want not. So today it was either make something that included RIPE bananas…or pitch them And I wasn’t about to do that!
So I whipped up a batch of our daughter in law Sara’s BEST Banana Bars in the WORLD. (Recipe HERE.) And instead of making my usual Cream Cheese Frosting I added about a cup of coconut to the usual recipe.
Like I’ve said so many times before…recipes are only a road map for me. I always seem to find a way to change things up to make every recipe my own.
Yes. I found a way to conquer my craving for coconut today…
And I didn’t even have to climb the neighbor’s tree!
