Don’t ask me how this great appetizer got it’s name…but give them a try. The sweetness of the prune and the saltiness from the bacon and the cheese is a GREAT combination! The amount of ingredients is determined by how many guests you are serving. I would allow at least three per person. (FYI…if you substitute dried apricots for the prunes they are called ANGELS ON HORSEBACK…! Who knew!)
DEVILS ON HORSEBACK
Pitted prunes
Gorgonzola or bleu cheese
Sliced bacon
Toothpicks
METHOD
Soak toothpicks in water for at least 15 minutes. Find the opening in the pitted prune where the seed was removed and widen the opening with your finger. Stuff the opening with Gorgonzola cheese. Cut each strip of raw bacon into thirds. Wrap each stuffed prune with bacon and make sure to cover the cheese with bacon to keep the filling inside. Secure each prune with a toothpick. Place parchment paper or tin foil on a rimmed cookie sheet. Place cooling rack on cookie sheet and place prunes on rack to allow all sides to brown. Bake in 400 degree oven for 15-20 minutes or until bacon is crispy. (There will probably be some smoking from the oven as the prunes drip some of their sweetness onto the parchment paper liner.) Can be served hot or cold.
