Whenever Fred and I make the trip to Robert and Patricia’s lake house I am in my glory! Patricia and I spend time together…cooking and laughing…and the guys reap the benefits when we sit down to dinner. This trip was no exception.
Patricia was anxious to share her recipe for pork chops with onions and apples, (FYI…DELICIOUS!) and I had brought a huge acorn squash that I roasted and topped with brown sugar, butter and cinnamon. Patricia shared some New Jersey grown tomatoes left by another sister in law who visited last week, so we turned them into a salad with fresh mozzarella slices and the last of the fresh basil in the pot on the deck. (Frost is coming so the basil was nearing extinction anyway.) I drizzled the salad with some extra virgin olive oil and balsamic vinegar and a few twists of fresh cracked black pepper and it was good to go. We roasted some sweet potatoes and opened some wine…and the dinner was an Autumn feast.
Good food, good wine, and good conversation in a BEAUTIFUL Lake setting…a recipe for success!
