When you’re looking for a simple main course to serve to company…this salmon dish will allow YOU to sit down with your guests and enjoy your own party!
That’s my only pet peeve when entertaining. I hate to be in the kitchen while all of my guests are somewhere else. And if I choose a menu that requires lots of fussing in the kitchen it makes my guests uncomfortable when I ask them to sit down in the living room or out on the deck without me. Not that they can’t survive without me…but it does make people uncomfortable. And everyone feels like they should be helping me…except ME.
You see…I’m not the kind of cook who can have other people hovering around me while I prepare a meal. It’s harder for me to explain what I would like guests to do than it is for me to simply do it myself. So the only way to have guests in the kitchen with me is to have ME chopping and stirring while my guest are sitting and sipping…and nibbling on something to “tide them over” until the meal.
Now…about this “recipe”…I’m not even going to write it as a recipe because it’s just too simple to be called a recipe! Here’s how I do it…
SALMON ON THE GRILL
Tear off a large sheet of foil. Drizzle with a teaspoon of Extra Virgin Olive Oil, or spray with cooking spray. Place salmon pieces on foil. Top with thinly sliced lemons, thin slices of onion, and top with fresh dill sprigs. Sprinkle with salt and freshly ground pepper. Top with a small drizzle of Extra Virgin Olive Oil and a splash of white wine. Fold and crimp the foil to form a tight package. Place on a pre-heated grill over medium heat and cook for about 10 minutes or until the salmon flakes with a fork. (Sometimes I flip the package halfway thorough cooking…and sometimes I don’t.) Slide the foil package onto a serving platter, open carefully to avoid a steam bath, and ENJOY!

bet this could be done with several things that cook quickly–
since I am not a fan of Salmon- but love how you cooked this!

Absolutely Linda…It would work with most fish and even chicken breasts. And you could even do it in the oven. In fact I’ll post a parchment wrapped chicken and veggie dish later. (You’ll love it too!)
