OK…So just call me “Doubting Thomas”…but when I read a recipe in that awesome book “The Four Ingredient Cookbook”…I doubted…OK?

In fact…I doubted SO MUCH that I stopped making the pie-right in the middle of preparation, and I made up ANOTHER version of my own, just so I wouldn’t “waste” the FOUR ingredients I had already dumped into the bowl!
And that’s not all I did. I even contacted the cookbook authors to make sure there had been no
mis-print in the cookbook!
After much reassurance, and a deep breath, I decided to try it again…so here goes…
A BEAUTIFUL PIE! And now I realize…I add an extra-tall “crust rim” to my pies, so a regular crust would make the filling exactly the right height in the pan! (Bigger is NOT always better, my friends!)
I am SO SORRY, Cookbook Ladies!!!
(I promise to trust you and ALL of your awesome Four Ingredient Cookbook recipes in the future!)
