If you’ve ever wondered if food can speak for itself…just look at this salmon. It’s heart healthy for sure!
Recently I bought a HUGE salmon at Penn Dutch. I love the fish mongers in that store! They will take the whole fish you’ve selected and cut it up however you want it…No extra charge! I had them cut it into salmon steaks AND two salmon fillets.
It had been frozen previously so I needed to cook it right away. That was not a problem, though, since salmon freezes quite well after it’s cooked. So I set out to grill both the steaks and the fillets…some for our dinner and some to freeze for later.
First, I cleaned the grill grates well.
GRILLING SAFTEY TIP: After cleaning your grill with a wire brush, make sure to wipe the grates carefully with a paper towel coated with oil! Make sure there are no stray wire bristles left on the grates that could become lodged in your food! Emergency rooms report a number of patients each year who ingest small wire fragments from those brushes, and dire consequences (including emergency surgery!) can be the result.
Since the grill was already hot, I decided to grill our asparagus too…
And if you’re looking for a great sauce to top your grilled salmon, I added a recipe below. You’ll love it…especially if you like horseradish! Use as much or as little as you like, but the flavor (and the heat) will deepen as the sauce chills in the refrigerator. I start with 1/2 tsp., but you can always add more if desired.
Fresh fish is served!
- 1/4 C. mayo
- 1/3 C. sour cream
- 1/4 tsp. garlic powder
- 1/2 tsp. citrus juice (I used key lime juice but lemon works fine too)
- 1/2 to 1 tsp. prepared grated horseradish
- 1 Tblsp. onion, finely minced or grated
- Fresh dill sprigs, minced (Or substitute 3/4 tsp dried dill weed)
- Fresh parsley, minced (optional, or substitute dried parsley flakes)
- Fresh black pepper
- Kosher salt
- Mix all ingredients together and refrigerate for at least an hour to blend flavors. Taste and adjust seasonings if needed. Spoon over grilled salmon or salmon patties.

Thanks Linda! And try cooking your salmon in different ways…You may find that the cooking methods you’ve used were the culprit…not the salmon! Keep experimenting…use really fresh fish…don’t overcook it…and I bet you’ll like it! (Especially when it’s drizzled with this amazing sauce! Keep cooking!
