What a MAGICAL night in Kinnick Stadium on Black and Gold night!
DEVILED EGGS
As usual, the ingredient amounts are adjusted, based on the number of eggs being used…but here is a list of the ingredients I used yesterday…and I think I used 14-16 eggs.
Mayonnaise (about 1/4 cup)
Yellow Mustard (1 tsp)
Tarragon Vinegar (2 tsps) (Use whatever kind you have…it’s OK!)
Course Ground Brown Mustard (about 1 Tablespoon or more)
White Sugar (about 2 tsp)
salt and pepper
fresh herbs if you have them (nice green color..I added fresh chopped chives for an onion taste
Taste the mixture and adjust to YOUR taste! If it’s too tart add more sugar. Too sweet? Add more vinegar. And if it’s too thick add a little more mayo…but in small amounts so you don’t get it too thin.
Pour the mixture into a plastic bag as I told you yesterday…
