Our friend John leads a pretty exciting life. He is part of a Homeland Security SWAT Team, so he spends his days doing anything from boarding ships out in the ocean to search for drugs and contraband, to processing passengers who are coming through the ports of Miami and Fort Lauderdale, to deporting illegal aliens. And because of his crazy work schedule and lack of meal breaks during work, he asked me if I had any ideas for some HEALTHY snacks he could carry with him to tide him over until he actually gets to stop for a meal.
I’m always up for a challenge, and I’m glad to help John…so today I started some cooking experiments, and I’ll share the results as I figure things out. My first experiment…
HEALTHY OATMEAL APPLESAUCE COOKIES
Preheat oven to 350 degrees
COMBINE THE FOLLOWING:
2 1/2 C. oatmeal (I used Quick Cooking)
2 large ripe bananas
2 T. honey
1/3 C. apple sauce
1/2 tsp. salt
1 1/2 tsp cinnamon
2 T. milk
1/2 C. blueberry flavored craisins
1/2 C. slivered almonds
1 1/2 tsp. vanilla
Cinnamon/sugar mixture to sprinkle on top before baking
Mix all ingredients well, and drop by tablespoonfuls on cookie sheets sprayed with cooking spray-or place on parchment paper lined cookie sheets (both methods worked fine for me.) Sprinkle with a small amount of cinnamon sugar mixture. Bake approx. 15 minutes or until set but not overly browned.
These cookies have a rather cake-like texture, but the almonds and dried fruit give a “crunch” and chewy taste factor. You could substitute ANY dried fruits, nuts, etc. You could also add a “glob” of peanut butter and omit the milk. I’ll keep playing with this recipe since this first attempt was pretty good. They really are kind of tasty…considering they contain no butter, eggs, flour or sugar!
