Here is my next experiment with healthy baking…these low fat muffins I invented…

I wrote down ingredients and the amounts as I added them to the bowl… |
HEALTHY FRUIT AND ALMOND MUFFINS
(Makes approx. 12 muffins)

Preheat oven to 350 degrees
MIX TOGETHER:
1 1/2 C. oatmeal
1/2 C. flour
1/2 C. brown sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp cinnamon
1/2 tsp. salt
1/4 tsp nutmeg
THEN STIR IN:
1 egg
1 C. apple sauce
1 smashed banana
1 finely diced apple-unpeeled
1/2 C. raisins 1/4 C. slivered almonds
1 tsp. vanilla
Mix well and place in GREASED muffin tins. (Fill muffin tins 3/4 full.) Bake 15-20 minutes or until toothpick inserted in center of muffin comes out clean. Don’t overbake.
Not bad for a first attempt!
