It’s the New Year, and so many of us are looking for ways to eat foods that are GOOD for us. And if you’re like me…..the holidays happened. And yeah. My body told me enough was enough, so I invented this tasty salad to help get me back on track in eating a rainbow everyday.

First up, grill (or George Foreman) some chicken breasts. I start by drying the chicken, drizzling with some Extra Virgin Olive Oil, then sprinkle with a little something special – Meemaw’s Magic Dry Rub. Pretty sure I could eat this on everything.
Once you grill those chicken breasts, cover with tin foil and set aside.
Next assemble your salad ingredients…
Don’t you feel healthier already? ? And now for the salad dressing…nothing you can’t pronounce!
Slice the chicken, toss the dressing with the salad, and voila! (Healthy) Dinner is served!
What healthy recipes are you making this week?
- 5 oz. pkg. fresh spinach
- 1 apple, cored and thinly sliced (Leave peeling on)
- 1 handful dried cranberries
- 1/4 to 1/2 cup walnuts
- 1/4 cup freshly grated Parmesan cheese
- 3 Tblsp. balsamic vinegar
- 3 Tblsp. honey
- 1/3 cup orange juice
- 1 generous Tblsp. course ground brown mustard
- Zest of one orange
- 1/3 cup extra virgin olive oil
- Salt and fresh cracked black pepper, to taste
- If time permits, place walnuts in a dry saute pan and swirl the pan over medium heat to toast the walnuts. (You'll know they're toasted when you begin to smell them.) Watch closely because they can burn quickly! When toasted, remove from the heat and allow to cool.
- In a salad bowl, combine spinach, apple slices, dried cranberries, walnuts and Parmesan cheese and set aside.
- In a glass bowl or measuring cup combine the balsamic vinegar, honey, orange juice, orange zest, and mustard. Mix well. Then SLOWLY whisk in the extra virgin olive oil and whisk until mixture begins to thicken slightly. Taste and add salt and fresh cracked pepper to taste.
- Drizzle small amount of dressing over salad ingredients and toss to combine. Do NOT overdress the salad. (You can always add more dressing, but you can't take it back out!)
- Top the salad with the grilled chicken (either warm or cold) and add more Parmesan cheese if desired. ENJOY...Guilt free!
