If you want your rice to turn out fluffy every time, follow these steps…
First…Saute the rice in a little oil until it just begins to change color and it begins to “pop”. Then add your liquid. (I sometimes use chicken broth instead of water.) Stir well and place the lid on tight for about ten minutes or until the rice is ALMOST cooked to your liking. (You CAN lift the lid to check for “done-ness”…it’s NOT a sin!)
When almost cooked, remove from the heat and place about three layers of paper towel over the pot and replace the lid tightly. (See the excess moisture begin to collect under the lid?)
Let it sit for 5-10 minutes. Remove the lid, fluff rice with a fork, and
VOILA!
Dinner is Served…
