I wish I could grow my own tomatoes. But the raccoons in our neighborhood are evil little monsters. They pick every tomato on the plant…one by one. They take a bite…and throw it down. And pick ANOTHER one. On and on. Until the plants are bare. Little devils…
So the other day I stopped at a farmers market here in town and picked up these two tomatoes and a cucumber…FOR FIVE DOLLARS! Yup…five bucks. And the tomatoes weren’t even ripe yet! So I put them on the window sill to ripen…and I vowed to make the most of that pricey purchase!
And several days later Karma smiled on me…
The Outlet had these HUGE buckets of Fresh Mozzarella…for $1.99!!! (The soup can is only there for size comparison.)
I think there were about twenty egg size balls of Mozzarella in the bucket! For two bucks!
So what would any upstanding Iowa girl make with that Mozzarella and the now-ripe tomato???
Why a Summer Caprese Salad…of course!!!
And I topped it with a drizzle of my homemade balsamic and honey reduction…
And what would an Iowa gal eat with that salad???
Why some absolutely delicious fresh-picked Iowa sweetcorn…that’s what!
BALSAMIC AND HONEY GLAZE
Put about 1/2 cup of balsamic vinegar in a saucepan or small skillet. Add a drizzle of honey and stir to combine. Add a sprinkle of fresh ground black pepper. Cook over medium heat until mixture thickens. Remove from heat as soon as mixture will coat the back of a spoon. (Mixture will continue to thicken as it cools so don’t overcook.)
Cool and drizzle on salads or grilled vegetables or even grilled meat. DELICIOUS!!
So all you neighborhood raccoons???
EAT YOUR HEART OUT!! THIS tomato got away! And boy…was it GOOD!
