I am not fond of leftovers. At all. In fact I often beg my neighbors to take them off my hands as soon as we finish a meal. I’m always looking for ways to make leftovers NOT taste like leftovers. So when I found myself with two pieces of leftover fried chicken in the refrigerator I turned that chicken into a Bleu Cheese Chicken Wrap for lunch.
I chopped up the cold chicken, and mixed it with some finely minced onion and a sprinkle of salt. Then I added a handful of chopped lettuce and a small drizzle of my Homemade Bleu Cheese Dressing. (You’ll find that recipe by clicking RIGHT HERE.)
Then I piled the mixture onto a tortilla shell, and tightly rolled it up.
This wrap turned out to be even more delicious than the fried chicken tasted the night before! And my homemade bleu cheese dressing is always a hit, no matter how I serve it. (It makes a great veggie dip too.)
The next time I have some chicken on hand I think I’ll try Ranch dressing with some dried cranberries or chopped fresh grapes and shredded carrots. Or maybe I’ll add some finely diced apple and celery. The choices are limitless.
Maybe leftovers aren’t so bad after all. (I’m sorry dear neighbors…)
