The word HEALTHY sometimes gets a bad rap…especially when it comes to food.
Most people think of things like alfalfa sprouts or slimey green mystery drinks…but that’s not my version. I set out to create a healthy muffin using ingredients I already had in my pantry and in my refrigerator.

HEALTHY FRUIT AND ALMOND MUFFINS
(Makes approx. 12 muffins)

Preheat oven to 350 degrees
MIX TOGETHER:
1 1/2 C. Quick Cooking Oatmeal
1/2 C. flour
1/2 C. brown sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp cinnamon
1/2 tsp. salt
1/4 tsp nutmeg
THEN STIR IN:
1 egg
1 C. apple sauce
1 smashed banana
1 finely diced apple-unpeeled
1/2 C. raisins
1/4 C. slivered almonds
1 tsp. vanilla
Mix well and place in GREASED muffin tins. (Fill muffin tins 3/4 full.) Bake 15-20 minutes or until toothpick inserted in center of muffin comes out clean. Don’t overbake

My mom heard all the ingredients in this muffin and she says you have to get this recipe. Everything in these muffins sound so good she says. For the banana, is it a ripe banana or just a regular? I can’t wait to make these! We need to buy a few things but I know my mom will love these. Thank you for sharing this recipe!

Hi Gail! Thanks so much for writing! I always use bananas that are soft and quite ripe in my baking because they can be completely mashed to blend with the rest of the ingredients. Please let me know how you like my HEALTHY muffins.
