Garlic Bread is a staple in my house…I pair it with soups, pastas, salads….you name it! And this is such a crowdpleaser….anytime I’m visiting my grands, they always ask me to make it.
GARLIC HERB BREAD
1 loaf French bread, split lengthwise
1 stick butter, softened (I prefer unsalted butter so I can control the amount of salt)
4-6 cloves garlic, minced
1/4 cup Extra Virgin Olive Oil
1/2 c. minced, fresh herbs, any kinds!
1/4 cup grated cheese (Parmesan, Asiago, etc.)
(I use a combination of any of these: garlic chives, onion chives, flat leaf Italian parsley, basil, sage, rosemary, etc.)
Place oil and minced garlic in a small pan and place on LOWEST heat. Allow to slightly simmer for 10-15 minutes or until garlic is softened and oil is perfumed. (DO NOT BOIL or garlic will burn…then you have to start over!) Cool the mixture, then pour into a bowl with the other ingredients.
Spread the mixture on both halves of bread and sprinkle with coarse Kosher salt and fresh-ground black pepper. Add another sprinkle of grated cheese and bake uncovered at 350 degrees for 15-20 minutes or until top begins to brown slightly. Slice and serve.

This soup looks so delicious. I make a similar soup I call “Clean out the refrigerator soup”. I use any greens I have available. Kale or spinach are my favorite greens. Thank you Meemaw Florida sharing your recipe.
