In case you didn’t already know…August is National Sandwich Month.
Sandwiches come in all shapes and sizes. Hot ones, cold ones, fat ones and skinny ones. And you can stuff just about anything between two slices of bread. (Heck, you can even skip the bread and use a piece of lettuce to hold in all that goodness!)
If you’re like me, sometimes a cold sandwich for lunch just doesn’t cut it. So one day I grabbed some unusual items from the refrigerator and combined them into a one of a kind panini. And it was really GOOD.
I started with two slices of marble rye bread. I buttered the outside. Then I slathered roasted red pepper hummus on the insides of both slices of bread. I added sliced chicken breast, Swiss cheese and some fresh basil leaves.
Next time I think I’ll try adding some sliced tomato and some thinly sliced onion….and some arugula would be delicious. I served the sandwich with my Homemade Potato Salad. You can get that recipe by clicking right HERE. (I think you’ll love it!)
And FYI…that panini recipe booklet survived just fine…except the cover of that book is now a lovely shade of TOAST.
