My Mom was the best Mom in the world…and the best cook in the world. Period. And what I would give to sit down at her table for just one more meal! I’m sure her love of cooking and entertaining is exactly the reason I love it too. And my recipe box is brimming with her tried and true recipes. But, like me, many of her best recipes were the ones she “made up” using the ingredients she had on hand, since we lived five miles from the nearest grocery store.
But today I am sharing one of her dessert bar recipes I have written on a fading and stained recipe card…and it’s one of the few recipes I may have improved from her original version.
OATMEAL APPLESAUCE BARS (Preheat oven to 350 degrees)
2 sticks butter, softened
1 C. brown sugar
2 eggs
1 C unsweetened apple sauce
1 tsp. vanilla
1 1/2 C flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 C oatmeal
1/2 cup raisins
Mix and spread into 12×18 in. (jelly roll size) sheet pan sprayed with cooking spray. Bake for 25-30 minutes until toothpick poked in center of pan comes out clean. Don’t overbake!
ICING
1 cup powdered sugar
1 tsp vanilla
Approx. 1 T Half and Half (Just enough to make a thin glaze.)
Mix until glaze consistency and drizzle over cooled bars. (I was out of butter to make real icing…so who cares? I made a glaze instead. Less calories and LESS WORK!)
So THANKS MOM for your recipe…and for making me the kind of cook who dares to experiment with ingredients…and who ALWAYS cooks with LOVE. And that’s ONE ingredient I’ll NEVER change…because it came straight from you! (XOXO Mom…and still miss you every day…)
