Rhubarb Cobbler is a quick and easy dessert, and I have a simple recipe I know you and your family will love. It’s a cinch to make and it uses only the most basic pantry items. In fact if you can get your hands on some rhubarb I’m guessing you’ve got everything else you need to make this dessert in time for dinner tonight!
Mom’s original, handwritten recipe didn’t include the sprinkle of cinnamon and sugar after baking, but I’m always one for gilding the lily. So I shook on a generous sprinkle as the cobbler cooled. It was a delicious addition!
Even though rhubarb is used to make luscious desserts, it’s actually a vegetable. It’s packed with fiber, protein, vitamin C, vitamin K, B complex vitamins, calcium, manganese and magnesium. It’s no wonder it’s been considered a “spring tonic” for generations. It was said to aid the blood and the digestive system.
My Grandma Grady (born in 1869) used to love a dish of sweetened cooked rhubarb sauce along with a slice of buttered bread.
I often wonder who was the first person to eat the stalks of rhubarb. But my bigger question is who also ate the leaves? Even though the stalks are filled with healthful vitamins…the leaves are poisonous! Those leaves are extremely high in oxalic acid which can cause severe illness.
Rhubarb is grown from roots, and the rhubarb plants in my yard were lovingly transplanted by my brother. He dug them up and brought them to me from the farm where we grew up. And I think of my family every time I dig into a dish of this delicious cobbler.

And by the way…you may want to try an 8 x 11 inch pan for the recipe since some folks have told me their cobbler has been too full in an 8 x 8 pan. 🙂
