It’s been a LONG time since I’ve made a simple roast beef dinner in the oven…and I WISH you could smell the aroma coming from my oven right now! Why in the world has it been so long since I’ve made a roast!
It’s SO SIMPLE. I thawed out a roast and dried it with a paper towel. Then I sprinkled it with salt and pepper and browned it on all sides in a small amount of Extra Virgin Olive Oil. I then threw in one onion (quartered) and about 5-6 cloves of peeled garlic, and one carrot. (I’ll add more carrots later-I just don’t want them to overcook.) I sprinkled with dried parsley.
Then I added about 1 cup of beef broth, and covered with a lid, and put the pan in the oven at 300 degrees. (I’m letting it cook for about 4-5 hours.)
I’ll add more carrots about 45 minutes before dinner time. And I’ll add one box of mushrooms (quartered) at the same time I add the extra carrots. And I’ll make a big pot of garlic mashed potatoes too. And I think I’ll steam some fresh spinach in a skillet with some fresh garlic and a squeeze of fresh lemon juice…and a sprinkle of Parmesan to finish it off.
When the roast and veggies are ready, I’ll remove them from the roasting pan, and I’ll deglaze with some beef broth thickened with a little flour to make a pan gravy.
Dinner time is looking good…and I wish you could smell it…
