I didn’t feel like making a salad tonight, so in order to get that RAINBOW I’m always searching for, I decided to ROAST a bunch of veggies…
I stirred in a few tablespoons of Extra Virgin Olive Oil and tossed everything together. Then I poured it all into a single layer on a sheet pan covered with tin foil that I had sprayed with cooking spray…
I roasted at 450 degrees for about 20 minutes…and when I pulled the pan from the oven, I sprinkled on a handful grated Parmesan Cheese to let it melt…
(And my Cabernet Sauvignon wasn’t a bad either…)
Ahh…Rainbows are a BEAUTIFUL thing…
