Brownies are always a treat..especially when I find myself trying to use up all of the items in my cupboards before we head South for the winter. And if you’re REALLY observant, you’ll see this lone box of brownie mix expired in August! (I just noticed that date as I am writing this blog post.)
As far as I know…none of our friends died last night after eating these, so that
Use By date is not a very big deal in MY book.
So yesterday I was trying to come up with something to take to our usual “Sunday Night Friends” get-together, and I noticed this box. I rarely use mixes, and I’m not sure what prompted me to buy this one…obviously some time ago. And I don’t like “plain” brownies.
SO I kept looking for things to add to “doctor them up” as Mom said.
So…I followed the recipe instructions on the box and mixed in
2 eggs
2/3 cup vegetable oil
1/4 cup water
And then I got creative!
I added
about 15 large marshmallows-cut into quarters
A large handful of walnuts (chopped)
2 large handfuls of chocolate chips (some milk chocolate and some semi-sweet)
Some chocolate sprinkles on top
I stirred all the ingredients together with the brownie mix, and I baked as directed on the package.
COOKING TIP: Line your baking pan with tin foil or parchment paper and spray it with cooking spray. That way you can remove the brownies easily after baking.
Then…after they were baked…I sprinkled on more chocolate chips and some more chocolate sprinkles. And I dusted the whole mess with some powdered sugar. Just because.
And to my surprise…our friends thought they were AWESOME.

Rocky Road Brownies

Ingredients
- 1 box Betty Crocker Fudge Brownie Mix (18.3 oz. pkg.)
- 2 eggs
- 2/3 cup vegetable oil
- 1/4 cup water
- 15 large marshmallows...cut into quarters
- 1/2 cup walnuts, chopped
- 1 cup chocolate chips (some milk chocolate, some semi sweet)
- Chocolate sprinkles
Instructions
- PREHEAT OVEN TO 350 DEGREES.
- Line a 9 x 13 inch baking pan with tin foil or parchment paper. Spray the foil or parchment with cooking spray and set aside.
- In a mixing bowl, combine baking mix, water, oil and eggs as directed on the box. Mix well. Then fold in marshmallows, walnuts, chocolate chips. And sprinkle with sprinkles. (I like the way that sounds...like fairy dust!) Bake at 350 degrees for 24-26 minutes. Don't overbake if you like gooey brownies! Sprinkle with more chocolate chips and sprinkles after you remove from the oven.
Notes
- By lining the pan, it makes removing the brownies so much easier after they're baked. You could also add coconut, diced candy bars or any other goodies you happen to have in your pantry. Go crazy with this one! (Have some FUN with your food...That's A Meemaw Rule!)
