Chicken and Noodles is a comfort food classic, and my slow cooker version is as simple as it is delicious! I rarely drag out my slow cooker since I’m usually at home to babysit whatever dish I’m making for dinner, but one winter day I decided to dust off my slow cooker and plug it in. (Please keep in mind that our “winter day” in South Florida usually means temps in the 70’s or 80’s…so spare me the sad winter face!)
This “recipe” isn’t really a recipe. I simply used I tossed some bone-in chicken breasts into the slow cooker, and I threw in one onion and several carrots…all in BIG chunks.
Meemaw’s Tip: Bone in chicken breasts stay much more tender than boneless ones. And keep veggies in BIG chunks so they don’t fall apart during the long cooking time.
I added a heaping tablespoon of chicken bouillon and a cup of water. Then I sprinkled some poultry seasoning, salt and pepper in the pot and put on the lid. I cooked it for about six hours on low…and our condo smelled like Thanksgiving all day long!
When dinnertime rolled around, I cooked some no-yolk noodles in a saucepan with chicken broth instead of water since chicken broth adds another layer of flavor. (I love no-yolk” noodles since they hold their shape and don’t disintegrate in the broth like regular noodles.) Then I added the noodles to the chicken and vegetables and combined all the ingredients to “marry” the flavors.
That dinner in a bowl was absolutely delicious.
And since Peepaw is the dishwasher in our winter home he was happy to see how few dishes he had to wash that night. It was a WIN-WIN all the way around!
You can change the ingredients to suit your tastes or to use whatever vegetables you have in your refrigerator. And chicken legs or thighs would work just as well if you’re a dark meat lover like I am. Yes…that dinner in a bowl can be made however you want to make it.
But the bottom line is…MAKE IT!
