So who cares if it’s 80 degrees…It’s still Winter! And I was hungry for SOUP. So I used what I had in the refrigerator and the pantry…and I made up a recipe for Bacon, Kale and White Bean Soup…
BACON, KALE AND WHITE BEAN SOUP
1/2 lb. bacon, diced
12-16 oz. fresh kale, washed and chopped
1 medium onion, diced
3-4 cloves garlic, minced
3 carrots, peeled and diced
2 cans white beans, rinsed and drained
1 box beef stock
2 T. chicken broth granules
3 Cups Water
1/2 cup grated Parmesan cheese
In a soup pot, brown the diced bacon and cook until crispy. Add the onion, garlic and carrots and saute for several minutes. Then add the beef stock, water and chicken broth granules. Add the kale and simmer, covered for 20-30 minutes or until kale is cooked. Stir in the beans, and sprinkle cheese over soup and cook 5-10 minutes or until beans are heated through. Stir several times. Serve
It tasted great…even if we did have the windows wide open and ceiling fans on!
