Here is the recipe for the salsa I served to our friends…and, as usual, you can adjust the ingredients to your liking…I know I do!
I’m making another batch right now to serve this Labor Day weekend…
AVOCADO AND CORN SALSA
3 avocados, peeled and diced
3-4 ears of sweet corn, grilled or steamed
1 red onion, diced
1 red bell pepper, diced
1/2 C. olive oil
1/2 C. lime juice (I used bottled Key Lime juice that I use in pies…because that’s what I had!)
1/4 c. fresh chopped oregano (If using dried oregano herb start with a teaspoon.)
1/4 c. red wine vinegar
1 Tablespoon fresh minced garlic
1 teaspoon cumin (add more if you want…to taste)
1 teaspoon chili powder
4 shakes of Tabasco sauce
salt and pepper to taste
2-3 chopped and seeded Roma tomatoes, diced
Combine all ingredients and chill to blend flavors. You can use with chips, or you can top grilled chicken breasts, etc. It keeps for several days in the refrigerator.
A versatile salsa with great flavors!
