Then I added a box of chopped up portobello mushrooms…
I cooked them down and added a cup of Hubby’s sweet Moscato wine…(Not MY favorite, so we needed to use it up!)
I scraped up the brown bits in the pan and cooked the wine until it reduced by at least half…
Then I added an 8 oz. chopped up block of softened cream cheese…
Then I added about 3 cups of beef broth I had in the refrigerator…
And I added some leftover cooked bacon and about a cup of grated Parmesan cheese…
Then I diced up about 3 or 4 cups of leftover turkey and threw it in the skillet…
I let the whole shooting match come to a simmer…
Then I threw in a bag of frozen peas and I dumped it all into a large mixing bowl…and I stirred in the leftover noodles from Thanksgiving dinner! (No need to cook pasta.)
I dumped the whole mixture into a flat baking dish sprayed with cooking spray…
And I topped it with a sprinkle of Panko bread crumbs.
And instead of adding more calories by adding butter to the bread crumbs, I simply sprayed the crumb topping with cooking spray. (It works just fine!)
I threw the pan in a 375 degree oven for about 25-30 minutes…
I topped each serving with some shaved Parmesan cheese…
And it was delicious…even if I DO say so myself…
I only wish I had invited company to help us eat it…Even if it DID start out as leftovers!
