I don’t know about you, but unless I’m cooking breakfast for company or for a special occasion, I want to get in and get out of the kitchen…fast! (And breakfast is the ONE meal Peepaw makes for himself…as long as it’s cold cereal or oatmeal and toast!)
I’ve never been a big fan of cereal, so a “McMuffin-Type” sandwich is something I make for myself on a regular basis. In fact, I make it so often I’ve streamlined the process considerably.
So let’s make Meemaw’s hot breakfast…in two minutes!
Here is my “recipe…”
I start with some basic breakfast ingredients…
…and in two minutes (or less, depending on my temperamental toaster!) I have created THIS:
And less than a minute later, that sandwich looks like THIS!
Ahhh…Meemaw’s Breakfast Of Champions!
- 1 English Muffin
- 1 egg
- 1 slice American cheese
- Sliced ham, deli ham, turkey, or Canadian bacon (Whatever you find in your frig!)
- Cooking spray
- Drop the English muffin in the toaster
- Spray the cup of a microwave egg maker with cooking spray
- Break the egg into the cup and BREAK THE YOLK
- Close the lid of the egg maker
- Microwave ON HIGH for 45 seconds, then remove and set aside
- While egg is cooking, unwrap cheese and meat
- When egg is done, heat the meat slice(s) for about 15 seconds on high, remove and set aside
- When muffin pops up, place meat, egg and cheese slice on the bottom half and add the muffin top and "squash" the sandwich to make it hold together.
- ENJOY!

Great question Glenda! Just put a pat of butter in a small skillet and quickly fry an egg to your liking. Then pop it onto the toasted English muffin and add the ham and cheese and you’ll be eating breakfast in no time!
